CACAO BARRY CHOCOLATE MOUSSE
(Serves 6)
- 1/3 cup (75 mL) granulated sugar
- 1/3 cup (75 mL) water
- 4 egg yolks
- 4 oz (125 g) Cacao Barry St. Domingue Dark Chocolate (70%) or your favourite 70% dark chocolate
- 2 tbsp (30 mL) unsalted butter
- 1 cup (250 mL) whipping cream (35%)
1. Bring sugar and water to a boil and boil for three minutes.
2. Place egg yolks in a mixing bowl and slowly pour in hot sugar and water mixture until pale yellow and thickened.
3. In a bowl set over a saucepan of simmering water, melt chocolate and butter. (This can also be done slowly in the microwave at short intervals of 20 seconds.) Whisk into egg mixture until well combined.
4. Whip cream until it forms firm peaks. Fold one third of the cream into the chocolate mixture, then the remaining cream, gently folding until no white streaks remain. Spoon into six serving dishes, bowls or glasses, and refrigerate for at least two hours before serving.

I was standing in my bathroom yesterday watching the chickadees out in the yard, all floofed up against the snow.
One of them came flying right towards the window. I watched how it bobbed up and down in the air as it flew. The word that came to me to describe it was "filliping" - as in "filliping through the air towards me". So of course I had to come out to the computer and check it out.
